Berry Cobbler on a Traeger grill

 

Cooking Time: 35 minutes
Servings: 8
Ingredients:
For fruit filling
3 cups frozen mixed berries
lemon juice
1 cup brown sugar
1 tbsp. vanilla extract
1 tbsp. lemon zest, finely grated
A pinch salt
For cobbler topping
1-½ cups all-purpose flour
1-½ tbsp. baking powder
3 tbsp. sugar, granulated
½ tbsp. salt
8 tbsp. cold butter
½ cup sour cream
2 tbsp. raw sugar
Directions:

  1. Set your Traeger grill on “smoke” for about 4-5 minutes with the lid
    open until fire establishes and your grill starts smoking.
  2. Preheat your grill to 350°F for about 10-15 minutes with the grill lid
    closed.
  3. Meanwhile, combine frozen mixed berries, Lemon juice, brown sugar,
    vanilla, lemon zest, and a pinch of salt. Transfer into a skillet and let
    the fruit sit and thaw.
  4. Mix flour, baking powder, sugar, and salt in a bowl, medium. Cut cold
    butter into peas sizes using a pastry blender then add to the mixture.
    Stir to mix everything together.
  5. Stir in sour cream until dough starts coming together.
  6. Pinch small pieces of dough and place over the fruit until fully
    covered. Splash the top with raw sugar.
  7. Now place the skillet directly on the grill grate, close the lid and cook
    for about 35 minutes until juices bubble, and a golden-brown dough
    topping.
  8. Remove the skillet from the Traeger grill and cool for several minutes.
  9. Scoop and serve warm.
