Ingredients:
2½ cup cubed ripe mangoes
2cups all-purpose flour
1tsp. baking powder
1tsp. baking soda
2eggs (beaten)
1tsp. cinnamon
1tsp. vanilla extract
½ tsp. nutmeg
¾ cup olive oil
¾ cup sugar
1tbsp. lemon juice
½ tsp. salt
½ cup chopped dates
Directions:
- Start your grill on smoke mode and leave the lip opened for 5 minutes,
or until the fire starts. - Close the lid and preheat the grill to 350°F for 15 minutes, using alder
hard Traegers. - Grease an 8 by 4-inch loaf pan.
- In a mixing bowl, combine the flour, baking powder, baking soda,
cinnamon, salt, and sugar. - In another mixing bowl, whisk together the egg, lemon juice, oil, and
vanilla. - Pour the egg mixture into the flour mixture and mix until you well
combined. - Fold in the mangoes and dates.
- Pour the mixture into the loaf pan and place the pan in the grill.
- Place the loaf pan directly on the grill bake for about 50 to 60 minutes
or until a toothpick inserted in the middle of the bread comes out
clean. - After the baking cycle, remove the loaf pan from the grill and
transfer the bread to a wire rack to cool completely. - Slice and serve.
