Mango Bread

Ingredients:
2½ cup cubed ripe mangoes
2cups all-purpose flour
1tsp. baking powder
1tsp. baking soda
2eggs (beaten)
1tsp. cinnamon
1tsp. vanilla extract
½ tsp. nutmeg
¾ cup olive oil
¾ cup sugar
1tbsp. lemon juice
½ tsp. salt
½ cup chopped dates
Directions:

  1. Start your grill on smoke mode and leave the lip opened for 5 minutes,
    or until the fire starts.
  2. Close the lid and preheat the grill to 350°F for 15 minutes, using alder
    hard Traegers.
  3. Grease an 8 by 4-inch loaf pan.
  4. In a mixing bowl, combine the flour, baking powder, baking soda,
    cinnamon, salt, and sugar.
  5. In another mixing bowl, whisk together the egg, lemon juice, oil, and
    vanilla.
  6. Pour the egg mixture into the flour mixture and mix until you well
    combined.
  7. Fold in the mangoes and dates.
  8. Pour the mixture into the loaf pan and place the pan in the grill.
  9. Place the loaf pan directly on the grill bake for about 50 to 60 minutes
    or until a toothpick inserted in the middle of the bread comes out
    clean.
  10. After the baking cycle, remove the loaf pan from the grill and
    transfer the bread to a wire rack to cool completely.
  11. Slice and serve.
