Grilled Pineapple with Chocolate Sauce

Servings: 6 to 8
Ingredients:
1 pineapple
8 oz. bittersweet chocolate chips
½ cup spiced rum
½ cup whipping cream
2tbsp. light brown sugar
Directions:

  1. Preheat Traeger grill to 400°F.
  2. De-skin the pineapple and slice pineapple into 1 in cubes.
  3. In a saucepan, combine chocolate chips. When chips begin to melt,
    add rum to the saucepan. Continue to stir until combined, and then add
    a splash of the pineapple’s juice.
  4. Add in whipping cream and continue to stir the mixture. Once the
    sauce is smooth and thickening, lower the heat to let it simmer and to
    keep it warm.
  5. Thread pineapple cubes onto skewers. Sprinkle skewers with brown
    sugar.
  6. Place skewers on the grill grate. Grill for about 5 minutes per side, or
    until grill marks begin to develop.
  7. Remove skewers from the grill and let rest on a plate for about 5
    minutes. Serve alongside warm chocolate sauce for dipping.
