Ingredients:
1 pineapple
8 oz. bittersweet chocolate chips
½ cup spiced rum
½ cup whipping cream
2tbsp. light brown sugar
Directions:
- Preheat Traeger grill to 400°F.
- De-skin the pineapple and slice pineapple into 1 in cubes.
- In a saucepan, combine chocolate chips. When chips begin to melt,
add rum to the saucepan. Continue to stir until combined, and then add
a splash of the pineapple’s juice. - Add in whipping cream and continue to stir the mixture. Once the
sauce is smooth and thickening, lower the heat to let it simmer and to
keep it warm. - Thread pineapple cubes onto skewers. Sprinkle skewers with brown
sugar. - Place skewers on the grill grate. Grill for about 5 minutes per side, or
until grill marks begin to develop. - Remove skewers from the grill and let rest on a plate for about 5
minutes. Serve alongside warm chocolate sauce for dipping.
