Ingredients:
5 large bell peppers, tops and seeds removed
1 tablespoon olive oil
½ of large onion, chopped
½ teaspoon dried oregano
½ teaspoon dried thyme
Salt and ground black pepper, as required
1-pound ground beef
1 large zucchini, chopped
3 tablespoons homemade tomato paste
Instructions:
- Preheat your oven to 350 degrees F.
- Grease a small baking dish.
- In a large pan of the boiling water, place the bell peppers and cook for
about 4-5 minutes. - Remove from the water and place onto a paper towel, cut side down.
- Meanwhile, in a large nonstick wok, heat the olive oil over medium heat
and sauté onion for about 3-4 minutes. - Add the ground beef, oregano, salt, and pepper and cook for about 8-10
minutes. - Add the zucchini and cook for about 2-3 minutes.
- Remove from the heat and drain any juices from the beef mixture.
- Add the tomato paste and stir to combine.
- Arrange the bell peppers into the prepared baking dish, cut side upward.
- Stuff the bell peppers with the beef mixture evenly.
- Bake for approximately 15 minutes.
- Serve warm.
