Beef Stuffed Bell Peppers

 

Preparation Time: 20 minutes
Cooking Time: 40 minutes
Ingredients:
5 large bell peppers, tops and seeds removed
1 tablespoon olive oil
½ of large onion, chopped
½ teaspoon dried oregano
½ teaspoon dried thyme
Salt and ground black pepper, as required
1-pound ground beef
1 large zucchini, chopped
3 tablespoons homemade tomato paste
Instructions:

  1. Preheat your oven to 350 degrees F.
  2. Grease a small baking dish.
  3. In a large pan of the boiling water, place the bell peppers and cook for
    about 4-5 minutes.
  4. Remove from the water and place onto a paper towel, cut side down.
  5. Meanwhile, in a large nonstick wok, heat the olive oil over medium heat
    and sauté onion for about 3-4 minutes.
  6. Add the ground beef, oregano, salt, and pepper and cook for about 8-10
    minutes.
  7. Add the zucchini and cook for about 2-3 minutes.
  8. Remove from the heat and drain any juices from the beef mixture.
  9. Add the tomato paste and stir to combine.
  10. Arrange the bell peppers into the prepared baking dish, cut side upward.
  11. Stuff the bell peppers with the beef mixture evenly.
  12. Bake for approximately 15 minutes.
  13. Serve warm.
