Steak with Carrot & Kale

 

Servings: 4
Preparation Time: 15 minutes
Cooking Time: 12 minutes
Ingredients:
2 tablespoons olive oil
4 garlic cloves, minced
1-pound beef sirloin steak, cut into bite-sized pieces
Freshly ground black pepper, to taste
1½ cups carrots, peeled and cut into matchsticks
1½ cups fresh kale, tough ribs removed and chopped
3 tablespoons low-sodium soy sauce
Instructions:

  1. In a skillet, heat the oil over medium heat and sauté the garlic for about 1
    minute.
  2. Add the beef and black pepper and stir to combine.
  3. Increase the heat to medium-high and cook for about 3-4 minutes or until
    browned from all sides.
  4. Add the carrot, kale and soy sauce and cook for about 4-5 minutes.
  5. Stir in the black pepper and remove from the heat.
  6. Serve hot.
