Traeger Grilled Mexican Street Corn

 


    Preparation Time: 5 minutes
    Cooking Time: 25 minutes
    Servings: 6
    Ingredients:
    6 ears corn on the cob
    1 tbsp. olive oil
    Kosher salt and pepper to taste
    ¼ cup mayo
    ¼ cup sour cream
    1 tbsp. garlic paste
    ½ tbsp. chili powder
    Pinch ground red pepper
    ½ cup coria cheese, crumbled
    ¼ cup cilantro, chopped
    6 lime wedges
    Directions:

    1. Brush the corn with oil.
    2. Sprinkle with salt.
    3. Place the corn on a Traeger grill set at 350°F. Cook for 25 minutes as
      you turn it occasionally.
    4. Meanwhile mix mayo, cream, garlic, chili, and red pepper until well
      combined.
    5. Let it rest for some minutes then brush with the mayo mixture.
    6. Sprinkle cottage cheese, more chili powder, and cilantro. Serve with
      lime wedges. Enjoy.
