Ingredients:
1.5 lb. potatoes (gemstone)
Fresh parsley (chopped)
¼ cup Parmesan (grated)
Marinade Ingredients:
6 cloves garlic (minced)
2 tbsp. olive oil
½ tsp. dried dill
½ tsp. basil (dried)
½ tsp. oregano (dried)
½ tsp. Italian seasoning (dried)
¼ tsp. fresh pepper (ground)
½ tsp. kosher salt
Directions:
- The initial step is rinsing the potatoes with water. When done, place
the potatoes in a large Ziploc bag. - In a mixing bowl, add and combine the minced garlic cloves, dill,
Italian seasoning, basil, and ground pepper. Add this mixture to the
Ziploc bag together with the potatoes. - Coat the potatoes by shaking the Ziploc bag and refrigerate for 2
hours. - Once ready to cook, preheat your smoker to 225F.
- Use aluminum foil to make a foil packet and place it in the potatoes.
- Pour in two tbsp. of water in the foil and fold it in half on its edges.
- Put the foil packet on the smoker rack and smoke for 2 hours.
- Remove from the smoker and top with the grated parmesan and
parsley.
