Ingredients:
1-pound lean ground beef2 tablespoons extra-virgin olive oil
2 garlic cloves, minced
½ of yellow onion, chopped
2 cups fresh mushrooms, sliced
1 cup fresh kale, tough ribs removed and chopped
¼ cup low-sodium beef broth
2 tablespoons balsamic vinegar
2 tablespoons fresh parsley, chopped
Instructions:
- Heat a large non-stick skillet over medium-high heat and cook the ground
beef for about 8-10 minutes, breaking up the chunks with a wooden spoon. - With a slotted spoon, transfer the beef into a bowl.
- In the same skillet, add the onion and garlic for about 3 minutes.
- Add the mushrooms and cook for about 5-minutes.
- Add the cooked beef, kale, broth and vinegar and bring to a boil.
- Reduce the heat to medium-low and simmer for about 3 minutes.
- Stir in parsley and serve immediately.
