Ingredients:
2 garlic cloves, minced
1 tablespoon fresh lemon zest, grated
2 tablespoons olive oil
2 tablespoons fresh lemon juice
Salt and ground black pepper, to taste
4 (6-ounce) boneless, skinless salmon fillets
6 cups fresh spinach
Instructions:
- Preheat the grill to medium-high heat.
- Grease the grill grate.
- In a bowl, place all ingredients except for salmon and spinach and mix
well. - Add the salmon fillets and coat with garlic mixture generously.
- Grill the salmon fillets for about 6-7 minutes per side.
- Serve immediately alongside the spinach.
