Simple Roasted Butternut Squash

 

Cooking Time: 25 minutes
Servings: 8
Ingredients:
1(2 pounds) butternut squash
2garlic cloves (minced)
2tbsp. extra olive virgin oil
1tsp. paprika
1tsp. oregano
1tsp. thyme
Salt and pepper to taste
Directions:

  1. Start your grill on smoke mode and leave the grill open for 5 minutes,
    until fire Preheat the grill to 400°F.
  2. Peel the butternut squash.
  3. Cut the butternut squash into two (cut lengthwise).
  4. Use a spoon to scoop out the seeds.
  5. Cut the butternut squash into 1-inch chunks and wash the chunks with
    water.
  6. In a big bowl, combine the butternut squash chunks and other
    ingredients.
  7. Stir until the chunks are coated with the ingredients.
  8. Spread the coated chunks on the sheet pan.
  9. Place the sheet pan on the grill and bake for 25 minutes.
  10. Remove the baked butternut squash from heat and let it sit to
    cool.
  11. Serve.
