Cinnamon Sugar Donut Holes

Ingredients:
½ cup flour
1tbsp. cornstarch
½ tsp. baking powder
1/8 tsp. baking soda
1/8 tsp. ground cinnamon
½ tsp. kosher salt
¼ cup buttermilk
¼ cup sugar
1½ tbsp. butter, melted
1egg
½ tsp. vanilla
Topping
2tbsp. sugar
1tbsp. sugar
1tsp. ground cinnamon
Directions:

  1. Preheat Traeger grill to 350°F.
  2. In a medium bowl, combine flour, cornstarch, baking powder, baking
    soda, ground cinnamon, and kosher salt. Whisk to combine.
  3. In a separate bowl, combine buttermilk, sugar, melted butter, egg, and
    vanilla. Whisk until the egg is thoroughly combined.
  4. Pour wet mixture into the flour mixture and stir. Stir just until
    combined, careful not to overwork the mixture.
  5. Spray mini muffin tin with cooking spray.
  6. Spoon 1 tbsp. of donut mixture into each mini muffin hole.
  7. Place the tin on the Traeger grill grate and bake for about 18 minutes,
    or until a toothpick can come out clean.
  8. Remove muffin tin from the grill and let rest for about 5 minutes.
  9. In a small bowl, combine 1 tbsp. sugar and 1 tsp. ground cinnamon.
  10. Melt 2 tbsp. of butter in a glass dish. Dip each donut hole in the
    melted butter, then mix and toss with cinnamon sugar. Place
    completed donut holes on a plate to serve.
