Ingredients:
2tsp. cinnamon
½ cup unsalted butter (softened)
1large egg (beaten)
½ tsp. salt or to taste
2cups almond flour
¼ cup sugar
1tsp. ginger (optional)
Directions:
- Preheat the grill to 300°F with the lid closed for 5 minutes.
- Grease a cookie sheet with oil.
- In a large bowl, combine the cinnamon, almond flour, sugar, ginger,
and salt. Mix thoroughly to combine. - In another mixing bowl, whisk the egg and softened butter together.
- Pour the egg mixture into the flour mixture and mix until the mixture
forms a smooth batter. - Use a tbsp. to measure out equal amounts of the mixture and roll into
balls. - Arrange the balls into the cookie sheet in a single layer.
- Now, use the flat bottom of a clean glass cup to press each ball into a
flat round cookie. Grease the bottom of the cup before using it to press
the balls. - Place the cookie sheet on the grill and bake until browned. This will
take about 20 to 25 minutes. - Remove the cookie sheet from the grill and let the shortbreads
cool for a few minutes. - Serve and enjoy.
