Cinnamon Almond Shortbread

Ingredients:
2tsp. cinnamon
½ cup unsalted butter (softened)
1large egg (beaten)
½ tsp. salt or to taste
2cups almond flour
¼ cup sugar
1tsp. ginger (optional)
Directions:

  1. Preheat the grill to 300°F with the lid closed for 5 minutes.
  2. Grease a cookie sheet with oil.
  3. In a large bowl, combine the cinnamon, almond flour, sugar, ginger,
    and salt. Mix thoroughly to combine.
  4. In another mixing bowl, whisk the egg and softened butter together.
  5. Pour the egg mixture into the flour mixture and mix until the mixture
    forms a smooth batter.
  6. Use a tbsp. to measure out equal amounts of the mixture and roll into
    balls.
  7. Arrange the balls into the cookie sheet in a single layer.
  8. Now, use the flat bottom of a clean glass cup to press each ball into a
    flat round cookie. Grease the bottom of the cup before using it to press
    the balls.
  9. Place the cookie sheet on the grill and bake until browned. This will
    take about 20 to 25 minutes.
  10. Remove the cookie sheet from the grill and let the shortbreads
    cool for a few minutes.
  11. Serve and enjoy.
