Ingredients:
2 lb. sweet potatoes, cut into chunks
1 red onion, chopped
2 tbsp. oil
2 tbsp. orange juice
1 tbsp. roasted cinnamon
1 tbsp. salt
¼ tbsp. Chipotle chili pepper
Directions:
- Preheat the Traeger grill to 425°F with the lid closed.
- Toss the sweet potatoes with onion, oil, and juice.
- In a mixing bowl, mix cinnamon, salt, and pepper then sprinkle the
mixture over the sweet potatoes. - Spread the potatoes on a lined baking dish in a single layer.
- Place the baking dish in the grill and grill for 30 minutes or until the
sweet potatoes are tender. - Serve and enjoy.
