Ingredients:
1 eggplant (large)
4 tbsp. coconut aminos
2 tbsp. avocado oil
2 tsp. cumin (ground)
2 tsp. smoked paprika
2 tsp. coriander (ground)
2 tsp. cumin (ground)
½ tsp. cayenne pepper
½ tsp. garlic powder
½ tsp. sea salt
Directions:
- Cut the eggplant lengthwise into ¼-inch slices. Drizzle and brush the
eggplant slices with the coconut aminos and avocado oil. - In a small mixing bowl, combine the spices. Sprinkle the mix on the
slices on both sides, ensuring they are fully coated. - Preheat your grill to medium-high heat and place the slices. Grill each
side for 3 minutes till they become tender. - Remove from the grill and enjoy.
