Spicy Salmon

 

Preparation Time: 105 minutes
Cooking Time: 8 minutes
Ingredients:
4 tablespoons extra-virgin olive oil, divided
2 tablespoons fresh lemon juice
1 teaspoon ground turmeric
1 teaspoon ground cumin
Salt and ground black pepper, as required
4 (4-ounce) boneless, skinless salmon fillets
6 cups fresh arugula
Instructions:

  1. In a bowl, mix together 2 tablespoons of oil, lemon juice, turmeric, cumin,
    salt and black pepper.
  2. Add the salmon fillets and coat with the oil mixture generously. Set aside.
  3. In a non-stick wok, heat remaining oil over medium heat.
  4. Place salmon fillets, skin-side down and cook for about 3-5 minutes.
  5. Change the side and cook for about 2-3 minutes more.
  6. Divide the salmon onto serving plates and serve immediately alongside the
    arugula.
