Ingredients:
4 tablespoons extra-virgin olive oil, divided
2 tablespoons fresh lemon juice
1 teaspoon ground turmeric
1 teaspoon ground cumin
Salt and ground black pepper, as required
4 (4-ounce) boneless, skinless salmon fillets
6 cups fresh arugula
Instructions:
- In a bowl, mix together 2 tablespoons of oil, lemon juice, turmeric, cumin,
salt and black pepper. - Add the salmon fillets and coat with the oil mixture generously. Set aside.
- In a non-stick wok, heat remaining oil over medium heat.
- Place salmon fillets, skin-side down and cook for about 3-5 minutes.
- Change the side and cook for about 2-3 minutes more.
- Divide the salmon onto serving plates and serve immediately alongside the
arugula.
