Ingredients:
25 cherry tomatoes
1/8 cup basil (chopped)
1/8 cup goat cheese (crumbled)
1 tbsp. vinegar (balsamic)
2 tbsp. olive oil
1 tbsp. water
Pepper
Salt
Directions:
- The initial step is rinsing the tomatoes with water. Put the cherry
tomatoes in a Ziploc bag. - Add the balsamic vinegar, basil, cheese, olive oil, pepper, and salt in
the same Ziploc bag. Shake the contents of the bag and refrigerate for
2 hours. - Once the tomatoes are ready, make a foil pocket with aluminum foil.
Place in the tomatoes and pour in the marinade. Add a tbsp. of water to
the pocket and seal it. - Preheat your smoker to 225F.
- Put the foil packet with the tomatoes in the smoker, smoking for an
hour. - Remove the tomatoes from the smoker when done.
- Top with remaining goat cheese and basil.
